Curry Egg Ramen

Ingredients

  • Two packets of ramen
  • Two eggs
  • Curry power or Curry paste
  • Scallions
  • Cashews
  • Cilantro
  • Hot sauce (optional)

Get two packets of the best ramen brand you can find* and in a pan cook them with enough water just to cover them. The result of this dish is more of a pasta than a soup. While cooking add a lump of butter to the water. This elevates the dish into something saucey.

Also have another pan with boiling water and some vinegar* and poach 2 eggs to your liking. You can also fry the eggs if you want.

When the ramen is done drain most of the water and add the flavor packet plus anywhere from a teaspoon to a tablespoon of curry powder or curry paste. Mix up and place in a deep bowl.

Place the eggs on top and garnish with chopped scallions and cashews and add a sprinkling of cilantro.

Drizzle with your favorite hot sauce. Asian hot oil or Vietnamese chili sauce is great!

Notes:

1. Actually it doesn\’t matter the quality – even the ramen you find in a supermarket is good, but I like going to Asian stores and picking out brands that I have never seen. There are some interesting Japanese and Korean brands.

2. Vinegar in water helps poached eggs cook better. Just a bit though.
