Miso Mackerel Ramen

I’ve never had mackerel before, canned or otherwise. I wonder if sardines would work as well? Can you buy canned mackerel at a regular US grocery store?

    Ingredients

  • 1 packet Chicken or Curry Ramen (I use Jade brand, most should do)
  • 1 Tablespoon Red Miso Paste
  • 2 Teaspoons dried shredded Wakame (seaweed) (you may want to crush this down a bit if you don\’t like huge lumps of seaweed in your Ramen)
  • 1 Tablespoon dried or 1 whole spring onion, chopped
  • 1 125g/5oz tin Mackerel in brine (fresh could be used, but you\’ll have to work out the quantity yourself. Mackerel in oil could also be used, but drain the oil well.)
  • 1 tablespoon (sweet) soy sauce

Boil about twice the volume of water the ramen packet suggests and add seasoning packet, Miso, Spring Onion and Wakame, allow to simmer for a minute or two. I add the brine from the Mackerel as well at this point for a bit of extra flavour. Add the Ramen & cook until tender, then add the Mackerel. Serve. (the ramen will be in a slightly sloppy soup, delicious)

    Yes we here in the US can get Mackeral at most supermarkets as opposed to the old days when there were no Jet planes. Back then you had to live in New York or San Franciscc to get almost any “unusual” foods.

    These days we can get milk from New Zealand as well as our own and we can get double creame from Britain and butter from Ireland and truffles from France and Italy just to name a few things. This would have probably never happened had it not been for Julia Child and Jacques Pepin in the 1960s who turn American Cuisine into a more and better cuisine—-just as occured there in Britain—I do not know whose cuisine was more attrocious in the past —American or British but it was very bad before Julia—-the thought of even eating Spotted Dick sickens me just as collards do here in the US loaded down with grease.

    What we can not get locally we can get through the internet. I have ordered meals from Tour d’argent in Paris as well as things that in former days were impossible to get. All of this good and better cuisine has had a downside to it—both Americans and Brits are now too fat and have a high incidence of diabetes. Wine with our meals would help as the French do but the Oriental diet consisting mostly of vegetables and less fried foods would be more beneficial to everyone’s health.
