How to Make Noodles?

“Oujia” recently asked in a comment: “I have the recipe for noodles, but how do I make them into ramen?” Meaning, “How do I actually stretch out the noodles?”. I have seen this done on a TV show before, but I have no clue how to do it myself. Would a pasta maker help?

Any ideas?

    There is the basic noodle recipie I use. This is also good as spegetti or any posta shape.

    1 Egg
    1/3 Cup of flower, I think, it been a while.
    Water as needed.
    This makes one serving.

    Mixing in a food processor is really fast for multipul batches.
    Mix flower and egg.
    If to dry add water it to wet add flower. Dough roughly the consistency of playdough. Soft and pliable just this side of not sicky.

    You can then run through a paste maker or roll out and cut with pizza cutter. The currlies are really hard to make and don’t really change the taste.

    To cook
    Toss into lightly sallted boiling water. When tender drain.
    I usually put it in to my eating bowl and then make my stock. Once the stock is done I port it over the noodles.

    These noodles can be frozen prior to cooking for long term storage. I occationally have a pasta weekend where I do nothing but make noodle and ravioli that I freeze for later consumption.

    Ramen noodle are precooked (boiled or steamed) and then dehydrated.
    They are the instant rice of noodles.
    You can do this with any noodles, though homemade noodles will precook and then recook faster.

    Hi,

    I want to make fresh ramen noodles, but I want to give them that curly character. Any Idea of how I can achieve this? I know they should be cooked then dehydrated but what can be used for the shape?
